Lots of beans and lots of roommates

T minus 12 days until Scout heads off to college. Laptop and printer arrived yesterday. A check list for Staples awaits her - I’m excited. You can’t buy hangers there. But she will acquire something in excess. Let’s wait and see. But that was not the headline news.
I came down from my office yesterday for a few minutes to pick up after someone , to nag someone to do something, to take the dirty sweat socks off the counter, to turn off the tv that had been abandoned an hour before, to wipe off the stove that looked like someone had fried onions…. Opened fridge door to find Tofurkey Italian Sausage and soy milk.
Not since an au pair we had eight years ago has soy milk been sighted in our home. Our family is carnivorous (although I can say without hesitation that we’d rather have soy milk in our house than that particular au pair).
Scout has, with 12 days left on the clock before she heads off to Boston, decided to become vegan. Why you ask? An excuse to spend more of our money at Whole Foods? An excuse to fry onions on the stove (see note above)? A legitimate interest on the part of our daughter to cleanse her body? A delayed reaction to the Taco Bell scandal? I just simply don’t know.
Time will tell. How long can Scout go without ice cream? Scout loves bread and cheese. She loves pasta. She’s never been a big meat eater but the lack of dairy may drive her crazy. And no I am not worried about how much her new diet will cost. I do worry that Scout’s new diet will drive me crazy. Then I think. T minus 12.
Eileen is nicer than I am. Last night I listened to Eileen politely offer Scout suggestions and encouragement last night over dinner. Scout had the couscous and broccoli. Eileen looked at her plate and began to talk protein. So Eileen talked beans.
Eileen talked about a lot of beans. And all I could think about was a lot of new roommates..
